Chicken Fajita Bowl

All the sizzling flavors of fajitas in bowl form. Juicy seasoned chicken with peppers and onions over rice — skip the tortillas, keep the flavor.

Ingredients

  • 2 chicken breasts, sliced into strips
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 1 cup cooked rice
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Lime juice, sour cream, and cilantro to serve

Instructions

  1. 1. Season chicken strips with cumin, chili powder, garlic powder, salt, and pepper.
  2. 2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook chicken for 5–6 minutes until golden and cooked through. Remove and set aside.
  3. 3. In the same pan, add remaining oil and cook peppers and onion for 5 minutes until softened and slightly charred.
  4. 4. Return chicken to the pan and toss everything together. Cook for 1 more minute.
  5. 5. Serve over rice with a squeeze of lime juice, a dollop of sour cream, and fresh cilantro.
