Thai Peanut Chicken Noodles

Rice noodles tossed in a creamy, tangy peanut sauce with tender chicken strips and fresh cucumber. A takeout-inspired dish that's faster to make at home.

Ingredients

  • 150g rice noodles
  • 2 chicken breasts, sliced thin
  • 1/2 cucumber, julienned
  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil
  • 1 teaspoon honey or brown sugar
  • 1 clove garlic, minced
  • Chopped peanuts and fresh cilantro to garnish

Instructions

  1. 1. Cook rice noodles according to package directions. Drain and rinse under cold water. Set aside.
  2. 2. In a small bowl, whisk together peanut butter, soy sauce, lime juice, sesame oil, honey, and garlic. Add 2 tablespoons warm water to loosen if needed.
  3. 3. Heat a tablespoon of oil in a skillet over medium-high heat. Cook chicken strips for 5–6 minutes until golden and cooked through.
  4. 4. Toss noodles with the peanut sauce until evenly coated.
  5. 5. Divide noodles into bowls, top with chicken and julienned cucumber.
  6. 6. Garnish with chopped peanuts and fresh cilantro. Serve immediately.
