One-Pot Rice and Black Beans

A hearty, budget-friendly one-pot meal packed with plant protein. Seasoned rice and black beans cooked together with onion, garlic, and cumin.

Ingredients

  • 1 cup long-grain white rice
  • 1 can (400g) black beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 2 cups vegetable or chicken broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Heat olive oil in a medium saucepan over medium heat. Add diced onion and cook for 3–4 minutes until softened.
  2. 2. Add garlic, cumin, and smoked paprika and stir for 30 seconds until fragrant.
  3. 3. Add rice and stir to coat it in the oil and spices for about 1 minute.
  4. 4. Pour in the broth and bring to a boil. Reduce heat to low, cover, and simmer for 15 minutes.
  5. 5. Stir in the black beans, cover again, and cook for 3–5 more minutes until the rice is fully cooked and the beans are warmed through.
  6. 6. Season with salt and pepper. Serve as is or topped with sour cream, salsa, or chopped cilantro.
