Baked Salmon with Sweet Potato

A high-protein, omega-3-rich dinner with caramelized sweet potato on the side. Nourishing, colorful, and ready in 30 minutes.

Ingredients

  • 2 salmon fillets (150g each)
  • 1 large sweet potato, cut into wedges
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2. Toss sweet potato wedges with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread on the baking sheet and roast for 15 minutes.
  3. 3. Season salmon fillets with salt, pepper, and a squeeze of lemon. Push sweet potatoes to the sides and place salmon in the centre of the baking sheet.
  4. 4. Return to the oven and bake for another 12–15 minutes, until salmon flakes easily and sweet potatoes are caramelized.
  5. 5. Serve on a plate with any remaining lemon juice drizzled over the salmon.
