Egg White and Spinach Scramble

A lean, protein-dense scramble with egg whites, spinach, feta, and sun-dried tomatoes. Quick, light, and macro-friendly.

Ingredients

  • 6 egg whites (or 3 whole eggs + 3 whites)
  • 2 cups fresh spinach
  • 30g feta cheese, crumbled
  • 4 sun-dried tomatoes, chopped
  • 1 teaspoon olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Whisk egg whites with a pinch of salt and pepper.
  2. 2. Heat olive oil in a nonstick skillet over medium heat. Add spinach and cook for 1–2 minutes until wilted.
  3. 3. Pour in the egg whites and let them begin to set around the edges, about 30 seconds.
  4. 4. Gently fold the eggs from the outside in with a spatula, cooking for 2–3 minutes total until just set but still moist.
  5. 5. Remove from heat and top with crumbled feta and sun-dried tomatoes. Serve immediately.
