Shrimp and Black Bean Bowl

Spiced shrimp over black beans and rice — fast, high-protein, and packed with flavor from cumin, lime, and cilantro.

Ingredients

  • 200g shrimp, peeled and deveined
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup cooked rice
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Juice of 1 lime
  • Salt to taste
  • Fresh cilantro and avocado to serve

Instructions

  1. 1. Season shrimp with cumin, paprika, chili powder, and salt.
  2. 2. Heat olive oil in a skillet over medium-high heat. Cook shrimp for 1–2 minutes per side until pink and curled. Remove.
  3. 3. In the same pan, add black beans with a splash of water and warm through for 2–3 minutes. Season with salt and a squeeze of lime.
  4. 4. Build the bowl: rice on the base, black beans next, then shrimp on top.
  5. 5. Finish with lime juice, fresh cilantro, and sliced avocado.
