Cauliflower Mac and Cheese

The ultimate keto comfort food. Tender cauliflower florets in an ultra-creamy, sharp cheddar sauce — zero pasta, all the satisfaction.

Ingredients

  • 1 medium cauliflower, cut into florets
  • 100g sharp cheddar, grated
  • 50g cream cheese
  • 1/2 cup heavy cream
  • 1 clove garlic, minced
  • 1/2 teaspoon mustard powder
  • Salt and pepper to taste
  • Paprika to garnish

Instructions

  1. 1. Cook cauliflower florets in boiling salted water for 5–6 minutes until just tender. Drain very well.
  2. 2. In a saucepan over low heat, combine cream cheese, heavy cream, and garlic. Stir until smooth and warm.
  3. 3. Add cheddar and mustard powder. Stir until the cheese is fully melted and the sauce is creamy. Season with salt and pepper.
  4. 4. Add the drained cauliflower to the sauce and toss gently to coat.
  5. 5. Serve immediately, dusted with paprika. For a baked version, transfer to a baking dish, top with extra cheese, and broil for 5 minutes.
