Egg-Stuffed Avocado

Baked avocado with an egg nestled inside — a 10-minute keto breakfast or light dinner that's rich, creamy, and deeply satisfying.

Ingredients

  • 2 ripe avocados, halved and pitted
  • 4 eggs
  • Salt and pepper to taste
  • Red chili flakes or smoked paprika
  • 1 tablespoon chopped chives or parsley

Instructions

  1. 1. Preheat oven to 220°C (425°F). Scoop out a little extra flesh from each avocado half to create a bigger well.
  2. 2. Place avocado halves in a baking dish, steadied with scrunched foil if needed.
  3. 3. Crack one egg into each avocado half. Season with salt, pepper, and a pinch of chili flakes.
  4. 4. Bake for 12–15 minutes until whites are set but yolks are still slightly runny.
  5. 5. Garnish with chives or parsley. Serve immediately with hot sauce if desired.
