Baked Salmon with Asparagus

A complete, low-carb dinner on one pan. Salmon and asparagus roasted together with lemon and garlic — effortless and nutritious.

Ingredients

  • 2 salmon fillets (150g each)
  • 1 bunch asparagus, trimmed
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 lemon, half sliced and half for juice
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. 1. Preheat oven to 200°C (400°F). Line a baking sheet with parchment paper.
  2. 2. Toss asparagus with 1 tablespoon olive oil, salt, and pepper. Spread on one side of the baking sheet.
  3. 3. Place salmon fillets on the other side. Drizzle with remaining olive oil, minced garlic, garlic powder, salt, and pepper.
  4. 4. Layer lemon slices on top of the salmon.
  5. 5. Bake for 15–18 minutes until salmon is cooked through and asparagus is tender with slightly crisp tips.
  6. 6. Squeeze remaining lemon juice over everything before serving.
