Egg and Avocado Bowl

A 10-minute, no-fuss low-carb bowl. Fried eggs over sliced avocado with hot sauce, everything bagel seasoning, and greens.

Ingredients

  • 2 eggs
  • 1 ripe avocado, sliced
  • 1 cup mixed greens or baby spinach
  • 1 tablespoon olive oil or butter
  • Hot sauce to taste
  • Everything bagel seasoning or salt and pepper
  • Squeeze of lemon juice

Instructions

  1. 1. Heat butter or olive oil in a small skillet over medium heat.
  2. 2. Crack in eggs and fry to your preference — sunny side up takes 3 minutes, over-easy needs a quick flip.
  3. 3. Arrange mixed greens in a bowl. Add sliced avocado on one side.
  4. 4. Slide fried eggs on top of the greens.
  5. 5. Season with everything bagel seasoning (or salt and pepper), a squeeze of lemon, and hot sauce. Eat immediately.
