Greek Chicken Bowls with Tzatziki

These Mediterranean-inspired bowls feature juicy marinated chicken, fluffy rice, cucumber, tomatoes, and a creamy tzatziki sauce. They are easy to scale up and keep fresh in the fridge for days. A clean, protein-packed meal prep staple you'll look forward to eating.

Ingredients

  • 600g boneless chicken breasts, sliced
  • 1½ cups long-grain rice, cooked
  • 1 large cucumber, diced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • ½ cup store-bought or homemade tzatziki
  • Salt and black pepper to taste

Instructions

  1. 1. In a bowl, combine the olive oil, lemon juice, oregano, salt, and pepper. Add the sliced chicken and toss to coat. Marinate for at least 15 minutes, or overnight in the fridge for deeper flavor.
  2. 2. Heat a large skillet or grill pan over medium-high heat. Cook the marinated chicken for 4–5 minutes per side until golden and cooked through. Set aside to rest for 5 minutes, then slice.
  3. 3. Cook the rice according to the package instructions. Season lightly with salt and a squeeze of lemon juice.
  4. 4. While the chicken and rice rest, prepare the salad mix by combining the cucumber, cherry tomatoes, and red onion. Toss with a pinch of salt.
  5. 5. Allow all components to cool completely before assembling into meal prep containers.
  6. 6. Layer the rice, chicken, and salad mix into 4 airtight containers. Store the tzatziki separately in small containers to keep it fresh. Assemble fully just before eating. Refrigerate for up to 4 days.
