Avocado Toast with Fried Egg

Elevated avocado toast with a perfectly fried egg on top. Crispy edges, runny yolk, and ready in under 10 minutes.

Ingredients

  • 2 slices sourdough or whole grain bread
  • 1 ripe avocado
  • 2 eggs
  • 1 tablespoon butter or olive oil
  • Red chili flakes, salt, and pepper to taste
  • Squeeze of lemon juice

Instructions

  1. 1. Toast the bread to your liking.
  2. 2. Halve and pit the avocado. Scoop the flesh into a bowl and mash with a fork. Season with salt, pepper, and lemon juice.
  3. 3. Spread mashed avocado thickly over each toast.
  4. 4. Heat butter in a small skillet over medium heat. Crack eggs in and fry for 2–3 minutes until whites are set and edges are crispy.
  5. 5. Slide one egg onto each toast. Season with chili flakes and serve immediately.
