Microwave Mug Omelette

A full omelette in a mug, cooked in the microwave in under 3 minutes. The fastest hot dinner — or breakfast — you'll ever make.

Ingredients

  • 3 eggs
  • 2 tablespoons milk
  • 30g shredded cheese
  • 2 tablespoons diced bell pepper or leftover vegetables
  • Salt and pepper to taste
  • Optional: 1 tablespoon diced ham or cooked bacon

Instructions

  1. 1. Spray a large microwave-safe mug with cooking spray or grease with a little butter.
  2. 2. Whisk eggs and milk together in the mug. Season with salt and pepper.
  3. 3. Stir in cheese, diced vegetables, and ham if using.
  4. 4. Microwave on high for 1 minute. Stir gently with a fork.
  5. 5. Microwave for another 30–60 seconds until eggs are just set but still slightly moist.
  6. 6. Let stand for 30 seconds. Eat directly from the mug with toast or crackers.
