Veggie Quesadillas

Crispy flour tortillas stuffed with melted cheese, black beans, corn, and peppers. A 15-minute dinner the whole family loves.

Ingredients

  • 4 large flour tortillas
  • 1 can (200g) black beans, drained
  • 1/2 cup corn kernels
  • 1/2 red bell pepper, diced
  • 150g shredded cheddar or Mexican blend cheese
  • 1/2 teaspoon cumin
  • Salsa and sour cream to serve

Instructions

  1. 1. Mix black beans, corn, bell pepper, and cumin in a bowl.
  2. 2. Lay two tortillas flat. Sprinkle half the cheese over one side of each tortilla.
  3. 3. Spoon the bean mixture over the cheese, then top with remaining cheese. Fold the empty half of each tortilla over to make a half-moon.
  4. 4. Heat a large skillet over medium heat. Cook each quesadilla for 2–3 minutes per side until golden and crispy and cheese is melted.
  5. 5. Cut each into wedges and serve with salsa and sour cream.
